
Ingredients:
11⁄2 cups quinoa (make sure yours is pre-rinsed, or rinse it before you use it)
2 cups filtered/spring water
2 cups tomato sauce
1⁄4 – 1⁄2 cup shredded raw Mozzarella cheese
1 cup arugula or spinach
sea salt and freshly cracked black pepper, to taste
desired toppings: cooked mushrooms, browned organic grass-fed hamburger bits,
sautéed onions, bell peppers, etc
Instructions:
1. In a medium pot, bring the quinoa and water to a boil.
2. Turn the heat down to low, add a lid, and cook about 15 minutes.
3. Stir in the tomato sauce, 1⁄4 cup of mozzarella cheese, and arugula or spinach.
4. Season with salt and pepper, to taste.
5. Dish up the quinoa, top with the remaining cheese and any other desired toppings.
